Hello! I am new as well..I actually have my observation tomorrow morning at 8 am! 
I organize mine according to the group. All I do is write down the students' names and what we are doing. For example, tomorrow I am doing a reading lesson for my 3rd grade group since all of them have reading comprehension goals. We are learning that i, igh, and y all have the long i sound. Then I am teaching them how -es and -ed change the meaning of the word. We will do a few examples of how to change. Finally, we will review story vocabulary and review fact and opinion before we read our short story. While reading, the students will be filling out a fact/opinion chart together. Basically, I have shortened all of that and written in in my plan book. I have it in a binder along with my schedule and attendance log. Good luck and I hope this helped!
