I have not had to do this, but have tried to organize myself at times with broad based plans. For example, I like to use themes based on the seasons, books, etc. For each theme I have a list of various activities that I have/can/will do in the areas of language, artic, etc. I can pull these out and easily pick out activities for kids, groups, etc. If your principal wants details, you could put down how each activity focuses on each skill, and the utilize the IEP goals/objectives like previously mentioned.
