You have some very valid concerns. First of all, does your state have a caseload limit? I am in WV and we have a limit of 50 students on our caseload. Also, are you a member of the local teachers union? If so, they should have someone who could stick up for you to your supervisor and say that your caseload, lack of space, etc. make it impossible to serve your caseload. As for this mother, first I would tell her that /f/ is not developmentally appropriate for 3-year-olds (you don't say if she has any other sounds/processes) and I wouldn't even be seeing her at all. Secondly, let her know what your caseload is and that there is no logistical way that you can provide individual therapy for someone with just a developmental artic problem. Regarding lack of a mentor, does your state require that new teachers have a mentor? My state does and your supervisor would be in violation if she didn't meet with you so many times in the year. Is there another SLP in the county/area that you could talk to and get information from? Anytime I've ever needed help, most people were more than happy to help. It sounds like you've gotten that one of the bunch that is not sociable. Hope it gets better soon.
