Mostly heel, but head a little occasionally. I'm 43, so I have a while. I think most associations want you to be 50-55 to tie on, and ladies can at any age.
A lot of guys I know won't do it, makes them feel old I guess. I wouldn't unless I thought I really had to. I think its a little harder on the horse and just opens you up to a potential wreck. Although it never dawned on me while roping calves that being tied on was 'dangerous'...
