How does one determine CO timing ?

I am curious how one would know what the correct parameters should be for CPC detection, DTMF width, and pause/flash/disconnect times. I have no pressing reason to use other than the default values, but still am curious. I believe that all the switches in the area are 5-ESS, based on some on-line data. But there is no data that I see where one could get authoritative info on something like this.
