Beer cars might be one a month. Boxcars of lumber less often, perhaps 3 or 4 per summer. In the winter there was usually a LP car in town, sometimes two at once. This is all from memory going back a long time now. Also there was a small building that received a boxcar of petroleum products, barrels of oil, grease, etc about once or twice a year. Always came in a 50' Southern Pacific boxcar. If you are thinking about modeling you can always "up" these quantities. That's what I do. My model railroad industries gets a lot more than real life did.
