You're right. Professionals are not allowed to take volunteer time as a tax deduction. What you can do is write the individual a check for his/her services and have the individual write you a check in the same amount.
By the way you can't place a market value on donated items either. Well, you can do it, but the donor's accountant will quickly and quietly discount it. The accountant will use and appraiser's written, "certified", appraisal of the value of an item. Donated services are not tax deductible.
