Hi guys been feeding my mum healthy liquidesed soups and came across this recipe which you can have with or without cream:
1 1/2 large mushrooms or handful of small ones
1/2 onion
chop and fry the onion and mushroom in olive oil for five mins
Add 2 pints of stock with two vegi oxo cubes and simmer for 7 minutes
Use a hand blender to blend it - ready to serve striaght away or can add 50 ml double cream - makes 4 bowls and is really really yummy!
