We had a mixed week, but no really bad days, so I count that as a win!
I made something different that I hesitated on, but it was delicious!
We were going to make something like a ground meat chili from a piece of rump, but it doesn't hold up to the 2nd grind in the food processor, so we broke it up well in the pan after it was cooked.
It was spiced with cumin, garlic powder, etc.
Then, I added a thickener, but it didn't really thicken and we were starving, so I said that we should put it in the 'fridge, and then I'd thicken it before using each time. So, that night we had chili-masa with a portion of it, but it wasn't the same as the way we usually make it. It was 'okay.'
The next time that we had it, we had it over elbow noodles. Not bad.
Then, for the last portion, on Friday, we made spaghetti to have something like chili spaghetti. I kept asking Dh if he was sure that he wanted spaghetti with it, because if it over thickened, it would not be good. The liquid was going to form something like a gravy. I was really hesitant.
But, when he said yes I added a little liquid, then re-spiced it...it needed everything other than more pepper, then made a slurry to thicken. It came out the perfect thickness...whew! But, the flavor still lacked, so a bit more of everything, and I decided to add some of my freeze dried salad dressing herbs, which are 99% alliums...dried onions, garlic, shallots, etc. And, oddly, it's almost buttery tasting. A good thing for someone who can't have butter.
I added some cautiously, but it needed more, so I added more. Perfect!
As for the meal, it clung to the noodles perfectly! Not weirdly gummy, not too watery, perfect! And, the flavor of the alliums with the cumin etc. was very good!
We've been talking about it since, and wondering if there's any chance of reproducing it, lol! We'll find out one day, I'm sure!
I have so much cooking to get done, but Ds came by and he and Dh are down at the house to see if they can get the battery bank up here. I so hope so. It will mean that I can turn the generator off when we aren't cooking or running the heater, which means buying/needing less gas again!
It weighs hundreds of pounds, so they are breaking it down, replacing the battery caps with wax coated ones, etc. Hoping, hoping, hoping!
Mind you, even getting it up here is only 1/2 the battle. I will need to buy wire, and parts to hook it up. I can't do that at the moment, but this would be a huge step...!
So, with the small generator on while they work, I have to hold off on my cooking work for now.
Krypto has been whining and going from window to window. Ds didn't come up, but when Dh went down, Frankie started barking at him down there, which Krypto heard. Now he wants to see Ds and Frankie. Rats, the gig is up, lol!
Who knows when, but I need to make broth, pockets, noodle dish starter, apple hand pies, etc.
Oh, and our big shopping day, which was possibly tomorrow, has been put off as Ds hasn't gotten his paycheck yet. So, that's off until...? Can you believe that the last big shopping day was 2 months ago? It feels like yesterday, lol!
