Oh yes, sofrito! That one is complicated, depending where in Latin America we are talking about, or other places in the world.
It's used as a base for rice, beans, soups, stews, etc. and can, depending, contain tomatoes, spices, cilantro, garlic, parsley, etc. Some places always add tomato, but other places, like Puerto Rico, do not use tomato. Theirs is green, because they add no tomato. It's delicious made any way!
A lot of people make a batch, then freeze portions so they have instant flavor at hand.
