It was a slow going week in all ways, but I did make a couple of meals that I enjoyed.
One, in particular, was a one-pan meal with ground meat, onions, small cut greens, and penne.
First of all, I love meat, greens, and onions with pasta. But, this particular time, I remembered that I wanted to try something.
Ds and I have some freeze dried herbs, and herb mixes, that are pretty darned good. One is called Salad Dressing Mix. I don't have it in front of me, but it's herbs, garlic, onion, etc. including 'spring onions' which are quite good in it.
The thing is, that Ds went crazy over them since his first bottle at Christmas. He likes it on everything from chicken to meat.
So, when I was seasoning the meat, which I might normally have added my mixed Italian herbs to, I instead added the salad dressing mix, along with salt, pepper, and garlic powder. Oh, and a pinch, literally, of sugar to balance it. (Also helps with carmelizing the food a little, even in small amounts.)
Anyway, it was delicious! I wished for bread to make it into a sandwich!
I had it for a couple of lunches. Once with a little rice.
Since starting my antibiotics, I've made sure to keep myself in lemon pudding. Refreshing, and tasty! But, 4 days ago, I ran out, and we've not made it since.
Dh can barely move with his back, though it seems to be getting better this evening?
So, maybe more pudding by morning.
I still don't have my faux ramen ingredients ready to go. Just a couple more...
I have 2 bananas to use. I'm debating on a banana loaf, or muffins, if Dh feels up to lifting out the oven to cook them in.
