Do you use brown sugar with that cake, where the pineapple goes? I believe that when I make that cake, I use melted butter in the pan with brown sugar, then put the pineapple on that, topped with the batter.
Most recipes say to put the butter down, then sugar. I think, it's been a while, that I just mixed them, and once I know that I cooked them together in a pan, but decided that was not necessary and just dirtied another pan.
One of these days, if you get canned peaches, try that one too. It's strangely good. I made it the first time, in the 90's, to take to a Society for Creative Anachronism get-together. I got the basic recipe from a friend who was also a member, but made a couple of changes to it. I had no idea that we were going to like it so much!
