We are now on back-up meals until shopping day, next-next Monday.
But, first about those snow day cookies...hmmm, that's not a bad name for them!
They had the chew of a brownie, but you had to be super careful not to cook them over 9 minutes, period. The original recipe, which I tweaked, said 10.
They go from chewy, to rock hard if you bake them longer. Everyone can guess how I know that!
The first tweak, was using my gf flour.
2nd, I've said before how much I dislike the gf flour that I use, but it has to do until a later date. I find the flavor, when using more than a little, such as you would to thicken something, slightly offensive.
The one thing that I've made with it that doesn't have that taste, texture, etc. is my masa-based cake.
Aha! The corn base! So, I used 1/2 not-so-great flour, and 1/2 corn base. I thought that it might have a corn taste to some degree. But, by the time we made it, I had forgotten that my mix had the corn base. It didn't taste like it *at all!* I'm not sure why, but am not complaining.
This opens a door to many possibilities! I plan to try a ginger cookie with the same mix.
Meanwhile, after doing some addition, I can see that I will not be buying meat this month, even when it comes in. I have some in the freezer, and will get creative with it.
I have a notepad that is about 10" tall maybe? And, 7" across? On it, are the days of the week, with space to write, and a row on the far right that is for you to jot down what you need from the store.
Normally, I do that on the computer, and print out the weekly menu...though, not so much since Ds got married. However, it's nice to have the menu posted, and also the to-do list.
Mine has when to pull things from the freezer. For example, if we're having chili on Saturday, and it's made in the freezer, I will have on Friday's to-do list to take 1 bag of chili out of the freezer, and put it into the 'fridge for Saturday's dinner.
You can also put other reminders, such as to make potato salad for the next day, etc.
So, I am going to try hand writing the menus for us and Ds each week, and putting the to-do on the right hand side where the market list goes.
He's wanted something like this, because he's not always in cell range at home when he wants to know what they are having that night, and the next, so that he can plan to defrost meat, etc. Plus, ddil asks him about what the meals are. So, we're going to see how we all like it.
They will need a magnet to put it on the 'fridge, but I have a rather large one that they gave me for Christmas. It's got some photos of Thyri on it, wearing a chef's hat on Halloween, and posing with toy fruits and vegetables. It's already on my ice box, but it isn't used for anything, so this will give it a job!
Dh, who was eating small to moderate amounts of sugar, has decided to quit it 95%. He had some chocolate covered malt balls and fruit leather, which he has locked away. He is back to just Stevia for his oatmeal and lemonade, etc. He kept out his no-sugar-added, 4 oz. fruit cups for when he really wants something, or his blood sugar is too low.
I had planned the layered cheesecake-cherry-graham dessert for him for Valentine's Day, and some homemade ice cream sandwiches or strawberry shakes for Diner Night, once a week. In the past, he'd have a real dessert once a week. But, I would never undermine an effort to improve one's diet, so I'll just have to re-plan things, and focus on the meal part, and not the things with sugar in them.
