Bacon 6 slices
4 large Chicken Thighs with skin & bone in
2 Med Onions chopped
1 can stewed tomatoes with juice
2 cans white beans rinsed & Drained
Preheat oven 350 degrees
Cook bacon drain on paper towels Remove bacon fat
Pat chicken dry
season with 1/2 tsp salt
1/4 tsp pepper
Brown Chicken in fat in skillet on med high heat
Turn once - total 8 minutes
Drain on paper towels
Pour off all but 3 tablespoons of fat
Reduce heat
Cook onions with 1/4 tsp salt
Loosen brown bits and stir into onions
Cook approx 10 minutes till onions are golden
Add tomatoes & juice into onions bring to a boil UNCOVERED
3 minutes to slightly concentrate juices
Stir in cooked bacon and beans
Bring to a simmer
Nestle chicken skin side up amid the beans
Bake uncovered until chicken is cooked 20 tp 35 minutes at 350.
