I had a pretty good week overall.
We thawed a piece of meat. I don't know if I posted this, or not, but we got some meat, yay!
I had meat with pasta one day, leftovers of that another.
Now, we are going to make food to eat and for the freezer, hopefully, tonight and tomorrow. It's not a huge piece of meat, but will get the job done.
I am behind for Thanksgiving, but hope that I can catch up. Tomorrow morning, Dh has to see his Dr...it is required every 3 months, with phone appts. in between.
I need to make another pot of broth, make the cornbread to stale it, etc.
I need to buy my food tomorrow or Tuesday at the latest.
2 days ago, I made some chocolate-oatmeal cookies.
So, here's hoping that I get caught up!
I still need to make that cornbread, cook the veges for it, cook the vege dish ahead, make the ginger cookies, and make that broth.
If I do that, then the chicken, sweet potatoes, and stuffing can be cooked the day of, and the baked apples will cook during dinner, so that we can have them warm afterward.
This would be easier with a functioning kitchen, or at least counters, but it will be tasty even if it's a little more difficult than usual!
