Do you like it sweeter, or not-so-sweet? For sweet, you can add more sugar.
There's nothing wrong with the boxed, if that's the flavor and texture that you're going for. One of my grandmothers used Jiffy in a muffin tin, and served them with butter and jam, when they had friends over. That's because it has a more cake-like texture, and is on the sweet side. Of course, there are other brands.
Whereas my other grandmother made hers from scratch, and the recipe posted sounds close to hers. She used to serve it with meals, especially things like pinto beans.
The only thing that I don't know, is whether one box would be correct for the size of your pan. The Jiffy brand came in rather small boxes, I remember. But, other brands may not.
